A-Z of Summer: Ice Lollies

When the weather is hot there’s nothing better than a refreshing ice lolly, all you need is some ice lolly moulds which you can get in most supermarkets and a freezer – then you’re ready to get creative!

The easiest thing to do is to make up some squash, fill the moulds and pop them in the freezer, but why not try and be a bit more adventurous?

Making ice lollies with 100% fruit is easy. All you need is a small hand blender and some ripe fruit. If you haven't got a blender use a fork to mash the fruit instead.

Banana & Pineapple

To make 6 ice lollies you’ll need

  • 2 very ripe bananas
  • 1 small tin of pineapple (220g)
  • Pineapple juice

Blend the bananas and pineapple, and juice together, pour into ice lolly moulds and freeze immediately – they’ll be ready to eat the next day. Don’t use frozen fruit.

Mango & Pineapple

To make 6 ice lollies you’ll need

  • 1 large ripe mango
  • 4 pineapple rings

Peel and de-stone the mango and chop up the pineapple into smaller pieces – blend them together.  Fill the ice lolly moulds and freeze immediately.

Strawberry & Yoghurt

To make 6 ice lollies you’ll need

  • 250g of ripe strawberries
  • 100g of plain yoghurt

Take off the strawberry core and blend them into the yoghurt.  Fill the ice lolly moulds and freeze immediately.
