Joanne Makes Jamie some Muffins

As promised Joanne came in this morning with a bag full of muffins, especially for Jamie!

When Robbie Williams and Gary Barlow came in on Toby's show last week. Joanne was so excited to meet them - she even went and changed into a nice dress, and did her hair! However she needed someone to introduce her. 

So, Joanne begged Jamie to introduce her to Gary and promised to bake him anything he wanted if he could help her. 

It worked, and here's Joanne and Gary Barlow, so now for the baking.

This morning (Tuesday 31st) Joanne came in clutching 12 Cheesy Onion Muffins. We loved them so much we thought we'd share the recipe. 

Joanne’s Magical Muffin’ Recipe

Recipe makes 12 muffins!

Ingredients

30g butter, ½ red onion (finely chopped), 360g plain flour, 2½ teaspoons of baking powder, 1 teaspoon of cayenne pepper, 250g grated chedder cheese, 220ml whole milk, 1 egg, A pinch of black pepper

Preparation Method

Pre heat oven to 170 Celsius / 325 F. 

Melt the butter over a medium heat and then slow fry the red onion. Once cooked, remove from heat, and set aside.

In a mixing bowl mix the flour, baking powder, pepper, and cheese.

In a separate bowl, mix the Egg and milk

Then slowly pour in the egg and milk mix into the flour mix.

Once combined separate mixture into the 12 muffin cases.

Bake for approx 35mins.

To check muffins are cooked you can stick a skewer into the middle of the muffins. If it comes out clean then their cooked!
